Bread is Good – This I Know – For the Bible Tells Me So: Part 1

Jesus said, “I am the bread of life.” Surely, he would never say, “I am the POISON of life”, yet we have been convinced to believe that bread is downright terrible for us.

Since the dawn of the gluten-free era, I was skeptical. Didn’t Jesus tell us bread was a GOOD thing? How did something so basic, so necessary to life, become such an evil? As someone who wasn’t severely affected by gluten, the debate lingered in the background of my conscience for many years. But as our family grew, and the chatter about the dangers of gluten increased, I felt the need to delve into it a bit more…especially because I had a little one that struggled with mild eczema.

As the negative voices about gluten crescendoed, my common sense screamed louder. But could common sense alone win out against these ‘professionals’? Their names ended in fancy letters like M.D. or N.D., and my very unsophisticated reasoning sounded like a new rendition of Jesus Loves Me. “Bread is good…This I know…For the Bible Tells Me So.”

So, I started digging for a little more clout — peeling back the layers and asking questions.

*Cue the detective music*

Informant #1: A dear friend who chose to eat gluten-free. Not-so-fake alias: Amber.

My very unofficial interview happened on a whim at a summer BBQ in 2017. “No disrespect, Amber, but why do you eat gluten-free? I’ve heard so much about this trend, but I’m perplexed. We grew up with bread being the BASE for The Food Pyramid, and now EVERYONE ‘knows’ that we shouldn’t eat bread if we want to be healthy. But WHY??”

Like many others, Amber was pursuing a gluten-free lifestyle because a well-meaning health professional advised her to. Afterall, the first step to dealing with most every health issue from a nutritional standpoint is to cut out gluten and dairy.

Amber was kind enough to explain one reason we may be dealing with these issues is because some farmers use glyphosate (a.k.a. RoundUp) as a desiccant prior to harvesting wheat. Desiccant is just a fancy word for drying agent. She went on to explain that it isn’t uncommon for patches of wheat to be immature while the rest of the fields are ready. Glyphosate makes it possible to harvest everything at one time, increasing profit by ensuring a consistent product and ensuring customer satisfaction.

I will admit, I went home and Googled her claim (despite the fact that Amber is one of the most honest people I know), and sure enough… it was true. This realization began to unravel my trust in the food system. Why in the world would they be putting ROUNDUP on our food?? We already know that it causes cancer and all sorts of health problems just by being exposed to it, and yet here we are dousing our food in it?! Wasn’t there someone that made sure things like this didn’t happen??

Two major realizations were born out of this discovery:

  1. We must be our own food advocates. We can’t depend on governmental agencies to protect us. It’s simply beyond them, and anytime there is money involved, our interests may not be at the heart of recommendations. (And when I say ‘may not be’ what I actually mean is ‘are definitely not.’) No one will care about the health of you or your babies like you do!
  2. It’s often what WE’VE done to food that has transformed it from something God created as ‘good’ and turn it into something ‘bad’. We tend to do that, right? Romans 1 paints us a picture of how things go when we start making our own amendments to the natural order of life established by our Loving and Awesome Creator.

That second point lays the foundation for this series of posts. Join me as we wade through the muddy waters and wash this issue off with the cleansing power of God’s Holy Word and a little bit of science!
